Friends ask me all the time: ‘What do you give your kids instead of bread??’
To which I answer: ‘I make my own grain free bread!’. Sounds time consuming? It’s not. This took me 4 mins to put together (yes, I timed it) and 40 mins in the oven. Do try it at home!
-1 cup almond meal
-1/2 cup dessicated (fine) coconut
-1 tbsp. molasses*
-1/4 tsp sea salt
-1 tbsp. cinnamon
-2 tbsp. butter or coconut oil, melted
Pre-heat oven to 175 deg.C. Mix all ingredients together in a bowl. Pour batter into a loaf pan lined with baking paper. Bake for 35-40mins. Done!
*I like molasses as a sweetener as it contains a good amount of magnesium and other trace minerals. You can omit the sweetener altogether if following a strict sugar free diet. I find 1 tablespoon of molasses adds a nice flavour and colour to the bread. Great with butter/ghee or by itself.
